The cheese tuner is a common figure in other places and is now starting to appear in the Basque Country. Leartiker has launched this project in three artisan cheese factories: Pikunieta in Antxuola, Xoxola in Eibar and Lokate in Aia. The cheese tuner is responsible for controlling the maturation stage which is so important for achieving a quality cheese.
